長久手市東部の里山の地で、1990年半ば今から30年も前に、日本の「有機珈琲」を先駆者である沖野洋さんの拠点「OKINO」が創業しています。世界でも「有機珈琲」の有り様も評価基準もまだ確率していない時期に、栽培・生産から流通、販売に至るまでの過程において「品質管理」を独自に実践し、とことん追求し「オキノブランド」を確立しました。
現在も有機珈琲豆を日本で最も多く輸入し、北海道と東北の一部、沖縄を除くすべての都道府県に、長久手里山から日本で最高級の「オキノブランド」の有機珈琲が毎日配送されていっています。

今日の「有機珈琲」の先駆者である沖野洋さん。南米や東南アジアのコーヒーの現地での栽培、加工・流通・各国のコーヒーメーカーや珈琲組合の歴史と現状、さらにはコーヒー相場まで、有機コーヒー業界のパイオニアとして、国内外のコーヒー業界で広く知られています。
1952年愛知県生まれ。大学で電子工学を学んだ後、縁あって名古屋のコーヒー業界に就職。28歳、一人で関東エリアの取扱店開拓を担当。営業所もまだな頃に、上野動物園、多摩動物園、葛西臨界公園、著名な中華料理店、宿泊施設、レストランを自身が扱うコーヒーに切り替えるなど伝説的切り込み営業マンであった。34歳、名古屋本社に戻され、後に数くのスカウトを断るために39歳で独立。1991年株式会社オキノ創立。
1996年（平成８年）、長久手の現在の地ににて事務所・工場を設立。珈琲業界の業界人が有機珈琲の第一人者・沖野洋のプロフェッショナルな品質管理基準や仕事への姿勢を見学するため観光バスで乗りつけるほどであった。
以降30年間、長久手東部里山エリアにて日々、徹底した有機珈琲の焙煎加工・小分け加工（委託製造を含む）、有機紅茶（有機テトラティー）の取扱などをしつつ、有機珈琲界の”スーパーバイザー”として様々な役回り、活動をしている。
株式会社OKINOの建物の３階から東方の里山エリア、モリコロパーク方面を望む。
有機珈琲豆は専用の袋に詰められ主に名古屋港と神戸港に入港される。コーヒーの全てに通じたクラシフィカドールが鑑定作業で、テスト検査・官能検査で、No.1~No.10までの等級を付ける中、日本向けには、主にNo.2のハイクオリティの豆で、16-17番と整っている豆が輸入されているとのこと。
1990年代初頭、日本でも世界でも「有機栽培」や「オーガニック」という方法がまだ一般的に認知されておらず、認証方法も確立されていなかった時代、栽培現場や豆の品質や加工工程を深く知悉する中で徹底した「美味しさ」「品質」（信頼）と「安全性」（安心）の三位一体の価値観を追求。その結果、「有機栽培」による「有機珈琲」にたどりつかれています。
世界初：1990年代初頭、今日に通じる厳密な有機珈琲のみの製造・加工は、ドイツ ベルリンの珈琲メーカーとほぼ同時期にはじめる
沖野洋さんは1990年代初頭、焙煎方法を様々に試行する中、「原料の品質」と「安全性」を徹底的に追求していくなかで、「有機珈琲（Organic Coffee）」を独自に製造・開発。「有機珈琲」を製造するには、珈琲豆の生育、選別から焙煎・加工など全ての製造工程を把握・理解していることが必要。当時まだ日本だけでなく世界でも「Organic Coffee」という価値観や社会的認識もまだありませんでした。
その情報が世界に回る中で、ベルリンの珈琲メーカーがほぼ同時期に「有機珈琲」を製造・開発したことが分かり、後日、その会社のオーナーが東京を訪れた際にお互いがテイストし確認し合ったといいます。
沖野さんが日々焙煎を行っている焙煎機。オーガニックコーヒー専用の特別な焙煎機である。
オーガニックコーヒーの認定基準：「農薬」「殺虫剤」「化学肥料」が未使用の土地で栽培・採取されたものであることが義務づけられています。また、コーヒー豆の焙煎工程・加工工程でも、もちろん「添加物」「加工補助剤」の無使用。
有機JASマークが認定証明になっています。
グアテマラの珈琲豆の場合、高地で採れた豆が最上級クラス「SHB＝Strictly High Beans」。山の中腹が「HB = High Beans」とつづき、OKINO COFFEEは、最上級クラス「SHB＝Strictly High Beans」のみの豆を使用。
有機レギュラーコーヒーの製造（＋委託製造）に加え、有機インスタントコーヒーへの小分け加工も行っており「CUZCO」ブランドとして日本中に流通しています。JAパルシステム、生協などを通しても取り扱われています。有機レギュラー、有機インスタントのすべてにわたって「オキノブランド」の品質と価値が貫かれています。

「何気なく飲む一杯の珈琲は、社会、環境、経済、技術、信頼関係、社会貢献などとかかわっています。目の前の珈琲一杯には地球規模のストーリーがあり、それらのすべてが紡がれて心地よく昇華されたものが＜品質＞になるとの考えがベースにあります」
OKINO独自のWロースト（二度焙煎）について。生豆は品種ごとに一度焙煎し水分をある程度飛ばしているとのこと。その結果、酸味のないスッキリした珈琲に。再びロースターに入れ時間をかけて焙煎され、本来の豆の旨みを生かすことができる。ここにもOKINO珈琲の秘密が。
またブレンドごとの配合率で混ぜ合わせたアフターブレンドも、手間と時間を惜しまないOKINO珈琲の美味しさの秘訣の一つになっています。
珈琲を粉に挽く際、美味しさを追求するため、段階的に細かく挽ける臼（うす）と同じ様な方法として「グラインド方式」を選択しています。
最後の工程として、珈琲豆の銀皮（シルバースキン）をできるだけ除去。「カッティング方式」や「プロペラ方式」は採用していない。
